Put the chicken in a pot. Cover it with water, or other liquid. Add salt and any other seasonings.
Bring liquid to a boil over medium-high heat. Then simmer for 2 minutes for boneless breast, or 4-5 minutes for bone-in. Turn off heat, cover, and let chicken sit in the water for about 15 minutes. Test for doneness with an instant-read thermometer; temp at thickest part should be over 160 degrees F.
